RAW CARROT CAKE BITES

These little bites are delicious and a great twist on the old favourite! They are super easy to make and a great snack to pack up and have in your lunch box.

Ingredients: 
½ cup grated carrot
¾ cup almonds (other nuts work)
¾ cup of desiccated coconut
6 medjool dates (pitted)
2 tablespoons chia seeds
2 tablespoons maple syrup
½ vanilla pod seeds
1 teaspoon cinnamon
½ teaspoon nutmeg

Method:
Put everything into the blender except ¼ of the coconut for rolling. Once the mixture has formed a sticky dough, gently roll it out into 12 even balls. Use the left over coconut to roll them in. Place them in a tupperware and put them in the fridge for at least 4 hours.
