10 Mar Home-made pesto and courgetti salad
Spring is approaching and I couldn’t be happier. I thought I would share one of my favourite salads that is perfect for this time of year.
This is such a quick and easy nutritious salad, perfect for getting some extra vegetables into your diet.
- 2 courgettes
- Big handful of rocket
- 1 ripe avocado
- 2 handfuls spinach
- Handful of cashew nuts
- 1 clove of garlic
- Olive oil
- Squeeze of lemon
- Salt and pepper
Add all of the ingredients for the pesto into a high-speed blender and blend until smooth, you can add more olive oil until you get your desired consistency (I like mine quite thick)
Spiralize the courgettes; if you don’t have a spiralizer you can use a potato peeler to create long strips.
Mix the noodles, rocket and pesto altogether and enjoy. I like to add roasted vegetables. It is also great with fish or grilled chicken.
