Choc chip cookies

2 cups cashews
1 cup oats
6 tbsp maple syrup
½ cup cacao nibs
1 tsp cinnamon (optional)
pinch of sea salt

Throw everything into a food processor and blend until it starts to stick together. Roll into balls and then squish them into a cookie shape. Freeze for at least 3 hours and then they will keep in the fridge.

These are the perfect snack to take to work… super easy to make and taste great!
